As I write this, on Monday afternoon, the weather is perfect.
We have had picture perfect days lately.
Lovely, it is around 80 (27 C) degrees every day. Also, we have very low humidity.
So we all enjoy that aspect a lot.
I have booked my tickets to Scandinavia, and I am leaving in exactly three weeks.
IT will be strange to get to Närpes in Finland THAT late in the season. But it will be good, too.
I am looking forward to it, a lot.
For the first time ever I will partake in the "last day of the summer" fest, Villaavslutningen.
The summer is proceeding and you can really tell that the evenings are getting darker.
Peter and I like to hang out on the deck whenever we have a chance.
We're grilling out a lot.
Our latest obsession on the grill is potatoes that you cook in aluminum foil.
This is how I do it:
Boil as much potatoes as you think you will need.
When the potatoes are done slice them, and put them on the aluminum foil.
Cut shallots and spread them over the potatoes.
Add thyme, chives salt and pepper.
I also like to slice some parmesan cheese on top.
The very last thing you do is to pour some whipping cream over the potatoes.
WRAP it all up and put on the grill for about 12 minutes.
THIS is the perfect companion to ANY meat. I just love it, and so do ALL my guests.
For the meat above I make a kick ass shallot-black pepper butter.
DO try it, it is SOOO good!!
Mix shallots and black pepper into as much butter as you think you will need for your steaks.
I use salted butter.
MIX it all.
Add some Worcester sauce (maybe a 1-2 tea spoons) and mix it ALL in.
Let it all cool in the fridge before you use it!
Karolina is having such a great time in NYC.
This is her last week!
Peter and I will pick her up on Saturday morning. However, we'll spend all Friday with her in her classes.
I cannot WAIT to see her in class, and see what she has learnt this summer.
And the eating? How is that going for her...???
